3 Healthy Harvest Salads
Fall > any other season
The falling leaves and changing colors get everyone in the mood for another cozy fall season. Salads are one of my favorite meals to toss together, especially when I’m running low on other meal ideas or have zero time to make anything - aka all the time being a mom of four lol. Fall harvest produce is great to grab at your local farmer’s market when it’s in season (support local!!). Check out my 3 favorite feel-good salads using healthy fall options!
Saturday Morning Strawberry Cinnamon Rolls
Imagine this: you just woke up after sleeping in on a cozy Saturday morning. You’re craving something sweet, so you run down to the kitchen and whip up a batch of (fill in the blank - waffles? pancakes?). Your answer should most definitely be strawberry cinnamon rolls! If it wasn’t, that’s OK, but I’m here to change your mind!
Corn, Basil & Tomato Pasta made with Barilla® Red Lentil Spaghetti Plus 3 ways to find your protein without meat or tofu!
I worked for 2 years at a vegan cooking school, without being vegan myself. But, let me tell you - I really learned how to make food taste good and make recipes nutritionally balanced without the use of any animal products. I swear it was like the best kind of cooking and recipe boot camp. One of the biggest questions I get asked is about the plant-based diet and how to find protein. Now, you know that I do eat meat and cheese - but I do also try to load up my day with mostly plants. So that said - I get creative! I’m even including a nut-based goat cheese in the recipe below for you to try. There are plenty of ways you can find your protein without relying on animal products or even on tofu - which I know can be pretty polarizing.

The past, gosh - 9 years - I’ve been finding ways to better our diet at home. It started with me, moved over to my husband, and now includes the kids! From shifting to a predominantly plant-based diet, to finding healthy takes on classic recipes, I love experimenting in the kitchen! One simple way I have made our food at home more kid and health friendly is by swapping a few key ingredients with healthier alternatives.
End of Summer Anti-Inflammation Smoothie
In the summer, I think I make a smoothie every single day. It’s the perfect way to pack in fruits and veggies for myself (and for the kids when they steal my smoothies!). It’s also super refreshing and cooling when its 90+ degrees. It’s ALSO the easiest way to get a meal in when I am holding multiple children :)
Along with making my typical green smoothie, I like to switch it up with something sweet and spicy and anti inflammatory during the warm-warm days!

Making Fettuccine Alfredo without Cheese….whaaat?
Believe it or not, you can make almost any dish without dairy. I don’t cut anything completely out of my diet, but I very rarely eat dairy for many reasons. The two biggest reasons are that it is hard to digest, and it is really….....just, dirty (antibiotics, hormones, puss, EW).
