RECIPE: Peanut butter & Chocolate (n)ice cream
I LOVE sweets. Mostly because I need to balance savory with something sweet. And the best way to do this? A piece of dark chocolate, ideally, because it will have less sugar, junk, etc etc and can be extremely rich and satisfying on its own. Even better? Enjoy with tea. It keeps your mouth and hands busy so you don’t want to reach for other, or bigger, treats.
Ok, but something like ice cream always comes to mind when thinking about a post-dinner treat. How about ice cream made healthy?

Alright - so here’s my go-to recipe for simple Banana Peanut Butter N’Ice Cream! Serves: many!
INGREDIENTS:4-5 frozen bananas (I recommend cutting bananas into little coins, then freezing them flat on a tray. When they are smaller pieces, they will be easier to blend!)1/2 cup almond milk1/4 cup peanut butter1 tsp vanilla extractpinch of saltchocolate chips (optional)
Add the frozen bananas, almond milk and peanut butter to a food processor or blender and blend it up until it’s smooth! Add in the vanilla and salt and blend them in fully. Transfer your mixture to a pan that you can put into the freezer and ** if you want ** add a little peanut butter drizzle and chocolate chips in to make little chunks of both for later.
Freeze for 4 hours minimum, and scoop to serve! I love to top mine with extra peanut butter, chocolate chips, or even fresh berries for a little pop of color and acidity!
