Saturday Morning Strawberry Cinnamon Rolls
Imagine this: you just woke up after sleeping in on a cozy Saturday morning. You’re craving something sweet, so you run down to the kitchen and whip up a batch of (fill in the blank - waffles? pancakes?).
Your answer should most definitely be strawberry cinnamon rolls! If it wasn’t, that’s OK, but I’m here to change your mind. These are so perfect to make as a special treat and the kids can help!
Umm, just to be totally clear - these are not super healthy :) But I’ve included some healthier alternatives to suit your fancy.
What you’ll need:
Rolls:
1 bag of freeze-dried strawberries - crushed into a powder
1/2 cup sugar (coconut sugar would be a great option!)
1 can of Pillsbury Crescent Dough ****Can be substituted for a homemade version if you’d like****
1 tbsp butter or vegan butter alternative
Cinnamon
Fresh strawberries, sliced
Icing:
1 cup Greek or nondairy yogurt
1/4 cup maple syrup or honey
1/2 tsp vanilla extract
Directions:

Grab a handful of freeze-dried strawberries, place them into a Ziploc baggie, and crush them until they become powered. This is a good job for the kids :)

Mix the powder with the sugar until it’s a solid mixture.

Roll out the dough and spread a small amount of butter on top to create a sticky surface.

Sprinkle the strawberry sugar on the dough, as much as you’d like.

Sprinkle cinnamon over the top.

Roll up the dough and cut it into slices depending on how big you want each roll. (PS, unflavored floss works great for easy slicing!)

Spray down your baking sheet and place in your rolls. Bake at 375 degrees for 20 minutes, but keep your eye on them for the last few minutes.

Making the icing: blend together the yogurt, maple syrup or honey, and vanilla extract. If you want to add in some of the previous powdered strawberries - go for it!

Once the rolls have cooled a bit, pour on the icing and decorate with the fresh cut strawberries. Enjoy!
