I worked for 2 years at a vegan cooking school, without being vegan myself. But, let me tell you - I really learned how to make food taste good and make recipes nutritionally balanced without the use of any animal products. Now, you know that I do eat meat and cheese - but I do also try to load up my day with mostly plants. So that said - I get creative!
