Recipe: Butternut Squash Bowls

Sautéed or roasted squash cubes with fresh garlic and thyme
TOP WITH
½ cup cooked quinoaAdditional veggies of choiceHomemade cranberry sauce or pomegranate seeds once cooled (Here is a really good refined sugar free/simple ingredients recipe!)Toasted pumpkin or sunflower seedsA simple vinaigrette of 1 tbsp lemon juice, 2 tbsp olive oil, "pinch" of maple syrup, 1 tsp dijon mustard, salt and pepper, water as needed.
