Spooky Chocolate Mousse
I’m a Halloween lover, and my ghoul (eh, goal) is to make everything spooky. When I get the motivation to cook and create, this chocolate mousse is one of my favs! Think chocolate mousse - but the eyeballs make it spooky and the ingredients make it decently healthy! - YUM!
Have you ever made a whip from the liquid in a can of chickpeas? If not, this process is so cool and totally worth a try. That liquid from the chickpea can is called “aquafaba”. Once it’s whisked it for a long time creates a meringue like consistency. It's totally wild! A light, airy mousse that tastes decadent is the result. What you’ll need:
1 can of chickpeas - just the liquid2 tbsp of coconut sugar1 tsp of vanilla extract1/2 c of chocolate chips or dark chocolate, melted (plus a few extra for topping)Spooky eyes (because its halloween )
Directions:

Using a mixer, ideally, whisk the chickpea liquid and coconut sugar until peaks form so it looks like meringue. It will take a minute, but keep at it! I swear it magically starts turning white and fluffy.

Fold in the melted chocolate and vanilla extract very very gently because you don't want to ruin that fluff.

Spoon the mousse out into containers and put it in the fridge overnight to fully form.

When they’re ready, place two eyes and a few chocolate chips on top to finish it off!
