Comforting & Healthy Vegan Pad Thai

One of my most favorite & easy meals to make in the winter is a comforting Tofu Pad Thai! This recipe will take you only 30 minutes and is seriously (I can’t say it enough) so easy. Make it for the family or entertain your friends with this - and be sure to tell me if you make it! If you don’t LIKE tofu, no fear. You can replace with fried egg, chicken, or whatever protein you’d like.

What you’ll need:

1 pack of pad thai rice noodles1 tbsp tamarind paste1/3 cup coconut aminos1 tsp minced garlic (about 1 clove)1 tsp chili flakestoasted sesame oil (if you don’t have this, you can use what you have on hand)1 pack of extra firm tofu (pressed to remove the liquid & then cubed)gluten-free flour blend (or you can also use arrowroot, or you can use all-purpose if you are not gluten-free)4 stalks of green onion (chopped)1 cup of shredded carrots1/2 cup roasted unsalted peanuts

How to Make:

First things first, after pressing out the tofu on a paper towel & cubing it, throw the cubes in a mixture of flour, salt & pepper to “bread” your tofu. Then heat a saucepan with sesame oil and fry up your tofu until browned on every side. Then set your tofu aside on a drying rack with a paper towel to cool while you prepare the rest!

Cook noodles as advised on the box (normally, cover with boiling water for 10-15 minutes).

Next up, add more sesame oil to a saucepan and turn on medium heat. Add in your garlic, tamarind paste, coconut aminos, & chili flakes and stir. Next up add in the dry roasted peanuts & chopped green onion and fry in sauce for about 3-5 mins. Then add in shredded carrots and the noodles and stir in the sauce. FINALLY add in your tofu until it’s all combined.

Once all ingredients are combined in the pan you’re all done! I like to add extra chopped roasted peanuts, bean sprouts & hot sauce on my pad thai afterwards in my bowl but you can add anything you want!
