Crispy Chickpea & Avocado Flatbread

During the weekdays after the million life tasks, work tasks, and kid tasks are finally (or, well, almost) complete, one of the absolute last things we feel like doing is making dinner. Especially because we eat European style - usually around 10pm after the kids are in bed! Trust me, someday I want us all to eat as a family, and sometimes we do! But right now I want to sit down and enjoy my meal instead of getting a million things for the kids while they eat!

Even though we eat late, that doesn’t mean we’re not in the mood for something tasty! Lack of food inspiration has been hitting hard for a lot of people lately, so we’re ready to change that! Say bye-bye to boring, dry chicken recipes. Flatbreads to the rescue - a recent lifesaver at my house because they make the perfect blank canvas for a variety of recipes, and what we make can be both for us, and for the kids. 

I like using Nature’s Own Perfectly Crafted Flatbread because they are extremely versatile and they make that dinner prep a little bit easier. I am able to create so many different flavors, so our dinners are never boring or uninspired. Plus, they come in three different variations - from Artisan Flats, which are great for pizzas, to Bistro Flats for sandwiches, to Snack Flats for appetizers or mini pizzas for the kids.

Now, if you’re looking for a way to get in more plants or are trying to alternate your protein sources - you’ve got to try this Roasted Veggie, Crispy Chickpea & Avocado Flatbread recipe. This is a great option for any non-meat-eaters in the family, but meat can definitely be added for a different option! Not only is it super flavorful, but it’s also an easy way to sneak in some healthy veggies. The crispy chickpeas and creamy avocado have the protein and fat to keep everyone’s bellies full. 

The flavors in this recipe are unbelievable, but it can be modified to fit any flavor palate. Plus, Nature’s Own uses only amazing top-quality ingredients while leaving out the junk like GMOs, artificial flavors, and high fructose corn syrup.

Here’s the recipe:

Ingredients:

  • Nature’s Own Perfectly Crafted Artisan Flats

  • Any leftover or frozen vegetables! I used broccoli, onion, red pepper and butternut squash. Plus, some chopped up herbs.

  • Olive oil

  • Salt & pepper

  • Chickpeas (1 package, canned or boxed)

    • ½ tsp garlic powder

    • ½ tsp onion powder

    • ½ tsp paprika

    • 1 tsp coconut sugar

    • Salt

    • A few drizzles of olive oil

  • Avocado

  • Tahini Sauce

    • ⅓ cup tahini

    • 2 tbsp lemon juice

    • 3 tbsp almond milk

    • 1 clove roasted garlic

    • ½ tsp salt

    • Pepper to taste

Instructions:

  1. Preheat the oven to 400.

  2. Chop and roast all of your vegetables with a few drizzles of olive oil, salt and pepper - until just browned.

  3. Roast your garlic at the same time. What I do for this is cut the top of the head of garlic off, drizzle both with olive oil, wrap in tin foil and put it in the oven until fragrant.

  4. Roast the chickpeas as well with the spices above and olive oil, until crispy - depending on your oven, it’s likely between 15-20 minutes.

  5. Make the tahini sauce by blending the ingredients together until smooth.

  6. Cut the avocado into thin strips.

  7. Once everything is done cooking, toast the Artisan Flats in the oven just until warm.

  8. Make your flatbreads by topping the Artisan Flats with roasted vegetables, roasted chickpeas, thin cuts of avocado, and tahini drizzle.

  9. If you’d like, you can also add feta or goat cheese to the top. ENJOY!

If you aren’t in the mood for a pizza, you can also turn this into a sandwich using the Bistro Flats, or even create mini appetizers with the Snack Flats! Just make sure to chop your vegetables into small pieces.
